Chakhokhbili

Chakhokhbili is a traditional Georgian chicken stew made with tomatoes, onions, and a variety of herbs and spices. It’s a hearty, flavorful dish that's easy to make and packed with bold, savory flavors.

Ingredients:

  • 1 whole chicken, cut into pieces (or 4-6 chicken thighs)
  • 2 tablespoons vegetable oil or butter
  • 2 large onions, finely chopped
  • 4-5 ripe tomatoes, peeled and chopped (or 1 can diced tomatoes)
  • 3-4 cloves garlic, minced
  • 1-2 tablespoons tomato paste (optional for deeper flavor)
  • 1 cup chicken broth or water
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh cilantro and parsley, chopped, for garnish
  • 1 tablespoon white wine vinegar or lemon juice (optional, for added tang)

Instructions:

  1. Sear the chicken: Heat the vegetable oil or butter in a large pot over medium-high heat. Add the chicken pieces and brown them on all sides (about 4-5 minutes per side). Remove the chicken from the pot and set aside.

  2. Cook the onions: In the same pot, add the chopped onions and sauté until golden and softened, about 7-8 minutes.

  3. Add tomatoes: Stir in the chopped tomatoes and garlic. Cook for about 5 minutes, allowing the tomatoes to break down and release their juices. Add the tomato paste if using, and cook for an additional 2-3 minutes.

  4. Simmer the chicken: Return the browned chicken pieces to the pot. Pour in the chicken broth or water, add paprika, coriander, red pepper flakes (if using), bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the chicken is tender and cooked through.

  5. Finish the dish: Taste the stew and adjust seasoning if necessary. Stir in white wine vinegar or lemon juice for a bit of tang (optional). Let the stew simmer uncovered for another 5 minutes to thicken the sauce slightly.

  6. Serve: Garnish with fresh cilantro and parsley. Serve the Chakhokhbili with rice, potatoes, or fresh bread to soak up the flavorful sauce.
